Summertime can be unsurprisingly hot. There is nothing better than watching your kids run around enjoying themselves outside in the summer—or even joining in the fun with them! However, again summer is hot! I love cold drinks and cold treats to cool down, but I don’t want the ones I had in my childhood. They are full of food coloring and high fructose corn syrup and lots of other artificial everything. Really, there is no reason for that. Popsicles can be just as sweet and delicious made with whole foods. Here is a recipe that my family loves as we try to enjoy nature and beat the heat.
Berry Lemon Popsicles
This recipe will make about 12 layered popsicles. It takes a bit more time between freezing each layer, but they’re worth the wait.
Layer 1 Ingredients:
- 3 cups strawberries
- 1/2 cup honey
- 1/2 cup water
Layer 2 Ingredients:
- 1/2 cup lemon juice
- 1/2 cup honey
- 3 cups water
Layer 3 Ingredients:
- 3 cups blueberries
- 1/2 cup honey
- 1/2 cup water
Directions:
Step 1: Blend the first layer (strawberries, honey, and water) before pouring it into the popsicle mold and freezing for at least an hour.
Step 2: Blend the second layer (lemon juice, honey, and water) before adding it to your frozen first layer and freezing again for at least another hour.
Step 3: Blend the third layer (blueberries, honey, and water) before adding it to the second layer and freeze completely.
